We start with young green coconuts and bottle our coconut water at source in the Philippines. Instead of heat pasteurisation, we use High Pressure Processing (HPP), which helps preserve its clean, crisp taste and fresh tropical flavour. As coconuts are a natural ingredient, you may notice subtle differences between batches.
Our coconut water is taken from young green coconuts and bottled at source in the Philippines. We then use High Pressure Processing (HPP): a cold-pressure method that helps keep the coconut water safe and extends its shelf life without heat pasteurisation. Nothing is added – it’s simply 100% pure coconut water.
Heat can alter coconut water’s delicate flavour and natural characteristics. HPP uses intense pressure at cold temperatures instead, helping to preserve its fresh tropical taste and naturally occurring nutrients while extending its shelf life. The result is coconut water that tastes closer to fresh.
No. Our recipe and production method have not changed. Rebel Kitchen still contains just one ingredient: 100% pure coconut water from young green coconuts, with no preservatives, concentrate or added sugar.
We do not use heat pasteurisation. Instead, we use High Pressure Processing (HPP), a non-thermal form of pasteurisation that uses pressure rather than high heat. Because HPP is still a processing method, “100% Pure” is a clearer description than suggesting the coconut water is completely unprocessed or unpasteurised.
You may see both “Raw” and “100% Pure” bottles while older packaging moves through stores. This packaging difference does not indicate a change to the recipe or HPP process.
UHT coconut water is treated at a very high temperature so it can be stored at room temperature before opening. Rebel Kitchen uses HPP rather than UHT processing and is kept chilled throughout its shelf life. Avoiding high heat helps preserve its clean, crisp taste and fresh characteristics. Our coconut water is processed for safety, so “fresh and chilled” does not mean raw or untreated.
Our coconut water may naturally develop a pink hue when naturally occurring antioxidants react with oxygen and light. This colour variation is completely natural and does not mean the coconut water has gone off, provided it has been kept refrigerated and is within its use-by date.

Because coconuts are a natural ingredient, there may be subtle differences in sweetness, flavour and colour between batches. The coconut water may also naturally develop a pink hue. However, strong fizzing, a swollen or leaking bottle, an alcoholic, sour or rancid smell, an unusually bitter taste, or unexpected cloudiness accompanied by an unusual smell or taste are not normal.
A date printed on the bottle assumes that the packaging has remained intact and the coconut water has been kept refrigerated throughout its shelf life. If it appears spoiled, do not consume it even if it is still within that date.
Please keep the bottle refrigerated and contact us with photographs of the bottle and cap, the date and batch code printed on the packaging, where and when it was purchased, and whether it felt chilled when purchased. This information allows our Technical team to investigate. If it was bought from a retailer, please also contact that retailer regarding a refund or replacement.
Because we use HPP rather than UHT heat treatment, Rebel Kitchen is a chilled, perishable product. Keeping it refrigerated protects its quality and freshness throughout its shelf life. Please refrigerate it as soon as it arrives and keep it chilled until you’re ready to drink it.
Rebel Kitchen coconut water is a chilled, perishable product. Refrigerate it immediately when your order arrives and keep it refrigerated at all times, including before opening.
For website orders, we guarantee at least 30 days of remaining shelf life on arrival, although it will often have longer. Always drink it by the use-by date printed on the bottle. Once opened, keep refrigerated and consume within 24 hours.
We source our coconuts from smallholder farmers in the Philippines, using young green coconuts harvested at their freshest.

Both ranges contain one ingredient – 100% pure coconut water from young green – and both use the same High Pressure Processing method.
Our green Organic range is independently certified organic. Our Original range is not certified organic, so we do not describe it as organic.
As demand for Rebel Kitchen grew, we separated the ranges rather than pass the cost of maintaining organic certification across the entire supply on to every customer. Both ranges continue to use coconuts grown by smallholder farmers in the Philippines. If organic certification is important to you, look for the green bottle and certified-organic mark.
