How do you make dairy free Crispy Courgette Fritters?



4 cups grated courgette
1 cup GF breadcrumbs
1 cup Mylk
1 cup grated brown onion
Salt + pepper for seasoning
Coconut oil to fry
Optional : 1/4 cup minced fresh parsley
Dollop of Rebel Kitchen Dairy Free Yogurt to top.




1. Grate courgettes and squeeze them over a bowl to extract excess water.
2. Add grated onion, Semi Skimmed Mylk, gf breadcrumbs and parsley if using, then whisk to form your batter. *TIP* at this point you can adjust your mixture – add more gf breadcrumbs if it’s wet, and more Mylk if it’s dry.
3. Heat 1-2 tablespoons of oil on a pan, before spooning your courgette fritter batter using a spoon for uniformity. 4. Flatten and cook for 2-3 mins, flip em’ half way until crispy and golden. 5. Place cooked fritters on absorbent material for any excess oil.
6. Top with tangy dairy-free Yogurt or our Rebel Tzaziki.
